- To make Mediterranean Watermelon Salad, cube the watermelon, onions, tomato, and cucumber. 
- Tear the ice lettuce into 1” squares. 
- Cut the onion into quarters and separate each layer. 
- Soak in a bowl of water for 15- 20 minutes and then drain off the water before adding to the salad. 
- Mix the cut vegetables, ice lettuce, olives and chopped coriander leaves in a bowl and toss well. 
- To make the dressing: Pour pomegranate juice in a bowl. 
- Add mustard paste, oregano, jeera powder, flax seed powder, salt & pepper and whisk till all the ingredients are well blended. Add olive oil and mix well. 
- Pour the Mediterranean Watermelon Salad dressing into a bottle and refrigerate. 
- Add the dressing to the salad ingredients just before serving. 
- Serve Mediterranean Watermelon Salad chilled.
