- watermelon cubes - 1 bowl
- Yellow Bell Pepper - 1
- medium size onions - 2
- Cucumber - 1
- Tomato - 1
- pomegranate juice - 1
- Mustard - 1 tbsp
- olive oil - 2-3 tbsp
- Cumin/Jeera powder - ½ tsp
- Oregano - ¼ tsp
- Green olives - 10-12 nos
- ice lettuce - 1 bowl
- flaxseed powder - 1 tsp
- Pistachios (optional) -
- Freshly chopped coriander leaves -
- Salt, pepper -

Instructions
- Tear the ice lettuce into 1” squares.
- Cut the onion into quarters and separate each layer.
- Mix the cut vegetables, ice lettuce, olives and chopped coriander leaves in a bowl and toss well.
- To make the dressing: Pour pomegranate juice in a bowl.
- Pour the Mediterranean Watermelon Salad dressing into a bottle and refrigerate.
- Add the dressing to the salad ingredients just before serving.
- Serve Mediterranean Watermelon Salad chilled.
- The sweet watermelon and the salty olives give the Mediterranean Watermelon Salad an exquisite taste of sweet and salty.
