Kerala Style Padavalanga Thoran | Snake Gourd Stir Fry
Among the myriad of dishes that define the state's gastronomic landscape, Padavalanga Thoran, a Snake Gourd Stir Fry, stands out as a testament to Kerala's rich culinary heritage.
For preparing the traditional styled dish, first remove the seeds and other stuff from inside the snake gourd.
Clean it well and chop it finely.
Place together the grated coconut, green chillies, garlic, turmeric powder and cumin seeds in a mixer bowl and run it once to make it into a coarse form.
Heat oil in a pan or a kadai.
Splutter mustard seeds and saute red chillies, rice and curry leaves.
Add the chopped vegetable followed by the coconut mixture and salt.
Mix well the whole thing.
Cover and cook for about 5 mins.
Remove the lid and continue cooking on a low flame till done.
