Egg Aviyal
South Indian Aviyal with a difference
Ingredients
- 2 nos Eggs boiled and cut into 2 pieces
- 1 no Potato cut into small pieces
- 2 nos Green chillies
- 5 nos Small onions Kunjulli
- Tomato
- 1/2 tsp Red chilly powder
- 1/4 tsp Pepper powder
- 1/4 tsp Cumin seeds Jeerakam
- 1/2 tsp Ginger chopped
- 1/4 tsp Turmeric powder
- 1/2 cup Grated Coconut
- 1 tbsp Curd
- Curry leaves A few
- Salt As reqd
- Oil As reqd
Instructions
- Heat oil in a pan or a kadai.
- Add tomato and cook it.
- Add potato pieces.
- Add coconut paste and cook, till the potatoes are done.
- Turn off the flame and sprinkle curry leaves on top.

Difference is good .but not always
simple and easy 2 make
Experimentation is good. This dish is not bad either. But don`t call it aviyal as it is misleading. In aviyal there are no tomatoes. Nonetheless this is a good egg curry.
