Ingredients
- Baby baingan - 6 nos
For grinding:
- Peanut - 1 cup
- Coconut(grated) - 1 cup
- Red chillies - 4 nos
- Curry leaves(Few) -
- Poppy seeds(optional) -
- Cumin seeds(Jeerakam) - 1 tsp
- Urad dal - 1 tsp
- Turmeric powder - 1/2 tsp
- Red chilly powder(As reqd, according to your spice level) -
- Salt(As reqd) -
- Amchur(As reqd, if not available, use tamarind paste/water) -
- Oil(As reqd) -

Instructions
- Add little oil in frying pan. Add jeera, urad dal and red chillies. Fry for a few seconds till urad dal turns brown.
- Then, add peanuts and fry till light brown. Add grated coconut and fry till light brown.
- You will have a lot of mixture but do not worry.
- Brinjal Peanut Gravy is ready 🙂
