Egg Thokku Simple egg curry 4 nos Boiled eggs (cut into half)2 nos Onions (finely chopped, medium)2 nos Tomato (sliced, small)1/4 tsp Turmeric powder2 tsp Chilly powder3 tbsp OilSalt (As reqd)1 cup Water Heat oil in a pan or a kadai.Add onions and saute, till they turn golden brown.Add tomatoes and fry, till the tomatoes become tender.Add turmeric powder, chilly powder and salt and stir well.Fry for 2 mins.Add a cup of water and mix well.Slip in the eggs.Allow it to boil.Remove from the flame, when the water dries up completely. Tried it last night and wowwwwww……it tasted very good. It was so simple to make it too. I garnished it with some coriander leaves.
