Ingredients
  

  • 4 nos. Chaya Mansa leaf
  • 2 nos. Eggs
  • 2 tbsp Onion chopped
  • 1 tbsp Tomato chopped
  • 1 tbsp oil
  • Salt as required

Instructions
 

  • Pluck the Mansa leaf and wash thoughroughly under running water.Then pour boiling water into the leaves and keep it for 10 minutes. Chop the leaf into small bits.
  • Break the eggs into a container and beat well.
  • Heat oil in a non-stick pan and add chopped onion and tomato. Stir until onions are lightly browned and add chopped Mansa leaf. Stir well.
  • Now it's time to pour the beaten eggs.
  • Scramble the egg mixture and cook in low flame. Mexican Scrambled Eggs with Chaya is ready.

  • 4 nos. Chaya mansa leaf
  • 2 nos. Egg
  • 2 tbsp Onion chopped
  • 1 tbsp Tomato chopped

  • Beat two eggs by adding a pinch of salt.keep it aside.
  • Heat oil in a pan and add chopped onion and saute for 2 minutes.Then add chopped tomato and chaya mansa leaves.saute for 6-7 minutes in low to medium flame.
  • Now pour the egg mixture.
  • Scrambled egg with the help of a spoon.saute for 1-2 minutes and remove it from the flame.
  • Scrambled egg with chaya is ready now.
