- Ridge Gourd 250 gm -
- Egg 4 no. -
- small onion 1/2 cup -
- Green chili 1 no. -
- Ginger garlic paste : 1 tsp -
- Red chili powder : 1 tsp -
- Coriander powder : 1 tsp -
- Turmeric Powder: 1 tsp -
- Garam Masala : 1 tsp -
- Salt to taste -
- Oil: 2 tbsp -
- mustard 1/4 tsp -
- curry leaves 1 sprinkle -

Instructions
- chop the small onion and ridge gourd
- In a pan heat the oil and temper the mustard curry leaves and saute the onion and green chili for 5 mins
- Add red chili powder, coriander powder, garam masala, salt and turmeric powder and mix well
- add chopped ridge gourd and mix it and allow to cook for 5 mins in medium flame
- once the ridge gourd get cooked add egg mix it
- stir continuously until egg and Ridge gourd get blend well
- Now peerkangai muttai poriyal is ready to serve
