Biscuit Roti A slightly sweet roti For the dough:4 cups Allpurpose flour (Maida)Salt (As reqd)4 tbsp WaterOil (hot) For the filling: 1/2 a Grated coconut2 tsp Coriander powder2 tsp Cumin powder (Jeerakam)1/2 tsp Chilly powderJaggery (Size of a lemon, Sharkkara)1 tbsp Semolina roasted (Rava)Coriander leaves(chopped)Salt (As reqd)For the seasoning:1 tbsp Oil1 tsp Mustard seeds3-4 nos Green chillies6-7 nos Curry leavesOil for frying Mix all the ingredients for the filling in a bowl.Heat a little oil in a pan.Add mustard seeds and when they splutter, add finely cut green chillies, curry leaves.Add this seasoning to the filling and mix well.Prepare a smooth dough of maida with water, salt and oil. Keep aside for 30 minutes. Make small balls off the dough and roll them into small pooris.Keep one tbsp of the filling in the centre of each poori and fold them. Roll gently again. Fry them in oil.
