Olive oil (as required)1/2 Onion1/2 CarrotSalt (to taste)1 ½ Butter1 ½tbsp Flour1 cups Milk1/2 cup Cheddar cheese1 cup Chicken stock1/2 cup BroccoliPepper (to taste) 1)Melt butter in a saucepan. Add flour and mix well. Take care not to create any lumps. 2)Pour milk to it slowly by stirring continuously. Heat the sauce. 3)Once the milk is hot add the cheese bit by bit till its melted well. 4) In another pan sauté onion, carrot and salt in olive oil in medium flame till the veggies are soft. 5)Add chicken stock and broccoli to the cooked veggies and increase the flame. 6)Pour the cheese sauce slowly to it by stirring continuously. 7)Simmer in low flame for 5 minutes. 8)Take it from flame convert it to soup bowls. 9)Add pepper and salt to taste. 10)Garnish with broccoli and grated cheese.Serve it immediately.
