2 cups Cucumber (cubed)1/2 tsp Salt2 nos Green chillies1 no Onion (minced, big)Ginger (garlic paste - 1/2 tsp)2 nos Tomato (chopped finely)1 tsp Coriander powder1/2 tsp Red chilli powderCoriander leaves for garnishingFor seasoning:-1 tbsp OilCurry leaves (A few)1/2 tsp Mustard seeds1/2 tsp Cumin seeds (Jeerakam) Heat oil in pressure pan.Add the seasoning ingredients and saute for 1 min.Add the green chillies and minced onions, salt, turmeric and cook till golden brown.Add the ginger-garlic paste and saute for a while.Add cucumber, tomatoes, coriander powder and chilli powder, stir well and saute for 3 mins.Add 1/2 cup water, change the flame to high, close the lid and pressure cook until 1 or 2 whistles.After cooling, open the lid and see if any water left. :- If water is there, just cook open until water evaporates.Finally garnish with cilantro leaves.:- Serve with plain rice.
