Spicy egg masala

Ingredients
- Hard boiled eggs - 4 -
- Onions(sliced, big) - 2 nos
- Tomatoes(chopped, big) - 3 nos
- Red chilly powder - 1 tsp
- Garam masala - 1 tsp
- Ginger(garlic paste - 2 tbsp) -
- Kasuri methi(A pinch) -
- Amchoor powder(A pinch) -
- Coriander leaves(A bunch, chopped) -
- Mint leaves(A few, Pudhina) -
- Oil - 2 -
- Salt(As reqd) -

Instructions
- Hard boil the eggs and shell them.
- Halve the eggs and keep them aside.
- Heat 2 tbsp of oil in a frying pan.
- Fry onions, till they turn golden in colour.
- Add tomatoes and cook on high flame, till it becomes a puree.
- Add water as and when necassary (else its likely to burn).
- Once you get a smooth thick gravy, add chilly powder and garam masala and fry for a few more seconds.
- Add kasoori methi and amchoor powder.
- Add eggs.
- :- If you want slightly thinner gravy, add water and bring to boil again.
- Garnish with coriander leaves and pudina leaves.
- :- Serve piping hot with rotis or rice!
