Kerala Idli Podi / Dosa podi is a side dish which is served along with idli / dosa made with a mixture of urad dal, channa dal, and various other spices. Kerala Idli podi or milagai podi,how we call it is a dry spicy powder mixed with ghee or sesame oil, used as an accompaniment for Idli and dosas. This is very aromatic, flavorful, spicy and tasty powder a lot better than the store bought one. It is also used as a chutney substitute while travelling or for tiffin or lunch boxes. Basically this podi is a dry powder made with lentils and red chilies. There is some spiciness and heat in a typical milagai podi. There is a variation of idli podi called as gun powder which is spicy and includes more red chilies as well as garlic.

Instructions
- Allow the mix to cool down completely.
- In a mixer, grind the cooled mix of lentils to a smooth powder, adding the chili powder, salt and asafoetida.
- Once prepared, this chutney powder can be stored in an air tight container for 3-4 weeks.
- While serving with idli or dosa, take 1-2 tsps of the powder, add 1 tsp of coconut oil and mix.
