Kaippakka Achhar (Bitter Gourd Pickle) is a spicy dish normally accompanied with rice, Chappathi, poori. The chopped bitter gourd is mixed with spices and cooked. This is very simple and easy to prepare.

- Kaippakka(Bitter gourd) - 200 Gms
- Green chilli pieces - 4 tspns
- Ginger pieces - 2 tspns
- Garlic pieces - 1 tspn
- Vinegar - 2 tspns
- Asafoetida powder - 1 tspn
- Mustard seeds - ½ tspn
- Turmeric powder - ½ tspn
- Curry leaves - 10 Nos
- Salt(To taste) -
- Sesame oil - 4 tspns

Instructions
- Clean (also remove the seeds) and wash the Kaippakka (Bitter gourd). Then cut them into small pieces as shown in picture
- Add Turmeric Powder and Salt into the Kaippakka pieces, mix them well and keep it aside for about an hour
- Heat the Oil in a frying pan/Cheenachatti and burst the Mustard seeds in the hot Oil
- When the colour of the Green Chilli, Ginger and Garlic pieces turns into golden, add the Kaippakka (Bitter gourd) pieces and stir it.
- After about 3 minutes, add the Curry leaves into this mix and stir it further for about 5 minutes and put off the stove and allow to cool the Achhaar. Then add Vinegar also and stir it well.
- Kaippakka (Bitter gourd) Achhaar is ready. This Achhaar can serve with Parotta/Poori/cooked Rice etc. Always store this Kaippakka Achhaar in an air tight container/Jar so that it can keep afresh for the next 2 – 3 weeks.
