Kerala Egg Sandwich Less spicy, you may enjoy with tea, children will love it 5 nos Eggs (hardboiled)3 nos Onion2 nos Green chilliesCurry leaves (A few)2 tbsp Oil3 tbsp Allpurpose flour (Maida)Salt (As reqd) Cut each egg into two halves and take out the yolk with a spoon without breaking the white part.Chop onions and green chillies into small pieces.Saute onion and green chillies in oil for 5 mins.Add curry leaves.Add salt.Add the yolk and saute it for 2 mins.When cool, make small balls and fill this inside the half of the egg.Make a thick batter of maida with water and salt.Dip each egg piece in maida batter.Take some oil in a frying pan.Fry both the sides of the egg.:- Be careful when you add salt since you add it twice i.e.,in the filling and also in the batter.
