  • For preparing Kerala Potato Varutharacha Curry, heat oil in a kadai and splutter mustard seeds. When mustard splutters, add red chilly and stir for 2 minutes.
  • Add tomato and onions to this and saute for 2 minutes. Add chopped potatoes and cook with sufficient salt until potatoes are done.
  • In another kadai take little oil and fry grated coconut, coriander powder, chilli powder and turmeric powder. Saute for 5 minutes.
  • Stir for 2 minutes until it changes to brown colour.
  • Now grind in a mixer and keep aside.
  • Add cooked potato curry with tamarind extract to ground coconut mixture and boil for 2 minutes until the gravy becomes thick.
  • Now Kerala Potato Varutharacha Curry is ready to serve.
