- Palak(finely chopped) - 250g or
- Eggs - 2 nos
- Mustard seeds - 1 tsp
- Curry leaves - 2 springs
- Red chilly powder - 1/2 tsp
- Turmeric powder(A pinch) -
- Oil(As reqd) -
- Salt(As reqd) -

Instructions
- For preparing palak egg thoran, heat oil in a vessel and splutter the mustard seeds.
- Add curry leaves and red chilly powder.
- Then add chopped palak, salt and turmeric powder. Do not put the lid and allow it to cook till it becomes dry on low flame.
- Break the eggs and add it into the palak. Mix it continuously for 5 minutes.
- Palak egg thoran is ready. Serve with chapatti or as a side dish for rice.
