  • Soak grated bitter gourd in salted water for 5 minutes and then drain off the water.
  • Mix the bitter gourd, coconut, salt, green chillies, onion and salt together using your hand.
  • Heat oil in a pan.
  • Splutter mustard seeds and saute ginger.
  • Add the bitter gourd mix and saute well.
  • Sprinkle little water. Cover with a lid and let it cook.
  • Cook till all the water has dried up.
