  • For preparing Easy Mathi Curry, first clean sardines well and wash with some vinegar to remove the smell. Drain well. Then crush onion and dry chillies to a rough mixture.
  • Heat oil and fry the crushed onion mixture in it. Add salt and curry leaves.
  • Add gambooge and required water. Gambooge spices up the tangy flavor of the curry dish. You can adjust the tangy flavor by adding gambooge pieces.
  • Add sardine or mathi fish pieces and cook it. Mathi cooks very easily and requires just a few minutes. Once cooked and done, remove the vessel from fire.
  • Finally, pour little oil on top and serve the spicy, delicious curry with rice. You will love the dish. Sardines are very nutritious, healthy and economical too.
