Almond Soup

  • 2 tbsp Butter
  • 1/2 cup Onion chopped
  • 2 T Flour
  • 1 cup Boiling chicken stock
  • 1/2 cup Almonds crushed
  • 1/2 cup Milk
  • Salt As reqd
  • Freshly ground white pepper As reqd


  • Melt the butter in a saucepan.
  • Add the onions and cook until soft but not browned.
  • Stir in the flour.
  • When blended, add the boiling stock, stirring briskly.
  • Allow to simmer a few minutes.
  • Stir in the crushed almonds.
  • Cook at the simmer for 20 minutes.
  • Stir in the milk and allow to heat through.
  • Season with salt and pepper to taste.
  • :- Serve hot.
