Aromatic Paradise Chicken Aromatic Paradise Chicken, TRY ME!!!Quick n easy and of course tasty Chicken with Bell peppers 3 lbs Chicken (1 whole, cut into pieces)3 nos Onions (finely chopped and lighly sauted in 2 tsp of butter)3 nos Tomato (diced)3 tbsp Garlic paste3 tbsp Ginger PasteSPICES(freshly ground):5 nos Cardamom (Elakka)8 nos Cloves (Grambu)8 nos Pepper corns (Kurumulaku)4 nos Cinnamon (of 2 inches, Karugapatta)1 tsp Fennel seeds (Perinjeerakam)2 tsp Cayenne powder (depending on ur choice of heat!!, Red chilly powder)1 tsp Turmeric powder3 to Coriander seeds or coriander powder (If using seeds, roasted n freshly grounded)2 tbsp Curd3 tbsp Tomato Ketchup2 tsp Soya Sauce1 nos Bellpepper/Capsicum (diced, big)4 to Olive/canola/vegetable oil2 tbsp ButterSalt (As reqd) Marinate the chicken with the garlic-ginger paste, curd and the freshly grounded spices and salt for 1 hr.Heat 5 tbsp of olive oil(or veg oil or canola oil) in a deep frying pan.Add the marinated chicken.Wait, till all the water from the chicken is evaporated and brown the chicken in the oil.:- This would take about 10 - 15 mins.Add 2 tbsp of butter.Add the sauteed onions and stir for 5 mins.Add tomatoes and capsicum.:- Add these ingredients only after all the water has been evaporated.Add salt if needed more(Be aware of the saltiness of the soya sauce added later).Once the tomatoes blend well, add the ketchup and soya sauce.Stir fry, till you see the oil separating from the sides of the pan.Simmer for 10 mins i.e till the chicken is fully cooked.Garnish with fresh coriander leaves.;- Serve hot with rice or bread.;- Dont forget to write in ur sincere comments as well......Happy eating!!
