Ingredients
- Beetroot(peeled and chopped) - 2 nos
- Yellow lentils(Parippu) - 1/2 cup
- Coconut(grated) - 1/2 cup
- Tomato(chopped, Big) - 1 no
- Green chillies - 2 nos
- Cumin seeds(A pinch, Jeerakam) -
- Sambar masala - 1 tsp
- Turmeric powder - 1/2 tsp
- Curry leaves - 2 springs
- Mustard seeds - 1/2 tsp
- Dry red chillies(broken) - 2 nos
- Salt(As reqd) -

Instructions
- Mean while grind coconut, water and cumin seeds till smooth. Keep it aside.
- To the cooked lentils, add in the beetroot, sambar masala, turmeric powder, tomato, green chillies and salt. Allow the beetroot to cook.
- In a vessel heat oil and splutter mustard seeds.
- Toss in the dry red chillies and pour it into the beetroot curry. Mix it.
- Beetroot curry is ready.
