  • For preparing the delicious dish, first marinate brinjals in salt and fry it in 2 tsp oil. Keep it aside.
    Brinjal Masala Curry –
  • In the same pan add more oil if required and saute cumin seeds, mustard seeds and curry leaves.
    Brinjal Masala Curry –
  • Make a fine paste of onion, tomatoes and Garlic. Add the above paste into the pan and saute well.
    Brinjal Masala Curry –
  • Add all dry masala powders, mix and cook it for 10 mins.
    Brinjal Masala Curry –
  • Add the fried brinjals and Salt to taste. Cook in low flame for 10 mins
    Brinjal Masala Curry –
  • Add tamarind pulp and coconut paste. Cook it for another 5 to 8 mins in low flame.
    Brinjal Masala Curry –
  • Serve with Biriyani, Fried rice or White rice
