Brinjal Thoran A spicy dry dish 1 nos Egg Plant/Brinjal (4 - 5 nos for small brinjals, big)1/2 tsp Turmeric powder1 1/2 tsp Chilly powder1 tsp Pepper powder1/2 tsp Garam masala3 - Grated coconut2 nos Garlic pods1/2 tsp Cumin seeds (Jeerakam)2 nos Dry red chillies (Kollamulaku)1/2 tsp Mustard seedsCurry leaves (A few)Salt (As reqd)Oil for frying Cut brinjal to thin round pieces each about 1 cm thick.Marinate the above with turmeric powder, chilly powder and salt. Keep aside for 10 minutes.Heat some oil in a pan. Fry the marinated brinjal pieces till brown. Drain and keep aside.Heat 1 tbsp oil in a pan.Splutter mustard seeds. Add curry leaves and red chillies.Add onions sliced lengthwise and saute well till light brown.Add the fried brinjal pieces now.Add garam masala, pepper powder and salt(only if needed). Saute well.Grind together grated coconut, cumin seeds and garlic pods to a paste and add this to the above.Mix well.:- Tastes great with rice and rotis Kerala
