Carrot Cake - Kerala Style

  • 1 no Carrot medium
  • 3 nos Eggs
  • 2 sticks Butter 200 gm
  • 1 1/2 cups Allpurpose flour Maida
  • 1 1/2 cups Sugar
  • 1 tsp Vanilla essence
  • Caramel As reqd
  • 1 1/2 tsp Baking powder


  • Pre heat oven to 180 Deg celcius.
  • Make caramel using 2 tbsp of sugar and cool it.
  • Grate the carrot.
  • Melt half a stick of butter in a pan.
  • Add 2 tbsp of sugar and the carrot and saute till all the water evaporates.
  • Let it cool for some time.
  • Beat the remaining butter and sugar, till all the sugar melts.
  • Add the eggs one by one.
  • Add maida mixed with baking powder, a little by little and beat well.
  • Add vanilla essence, caramel and carrot and mix well.
  • Pour into a greased pan and bake until done.
