- Duck(cleaned) - 1 no
- Onions(finely sliced) - 3 nos
- Coriander powder - 1 tsp
- Pepper powder - 1 tsp
- Turmeric powder - 1 tsp
- Chilly powder - 1 tsp
- Cloves(Grambu) - 2 nos
- Cinnamon(Karugapatta) - 2 nos
- Coriander leaves(finely chopped) - 7 springs
- Lime juice - 1/2 cup
- Oil(As reqd) -
- Salt(As reqd) -

Instructions
- For preparing duck roast, cut the duck into about 8 big pieces.
- In a vessel add in duck, coriander powder, pepper powder, turmeric powder, chilly powder, cloves, cinnamon, onions and salt with required water. Allow the duck to cook.
- Strain it and keep the stock aside(do not throw away the stock).
- Heat oil in a pan and fry the duck till brown in colour.
- Remove the pieces and keep it aside.
- Pour in the remaining stock into the pan and allow it to simmer for 2 minutes.
- Toss in the fried duck and boil it till the stock dries.
- Garnish with coriander leaves and lime juice. Mix well and remove it from the flame
- Duck roast is ready. Serve hot as a starter.
