Ingredients
- Eggs(boiled) - 4 nos
- Potatoes(cut into 1" long thin slices) - 3 nos
- Onions(cut into thin slices) - 2 nos
- Tomato(cut into thin slices) - 2 nos
- Curry leaves - 1 sprig
- Green chillies(spilt into two) - 3 nos
- Red chilly powder - 1/2 tsp
- Coriander powder - 1/4 tsp
- Turmeric powder - 1/4 tsp
- Ginger(chopped) - 1/2 tsp
- garlic(chopped) - 1/2 tsp
- Salt(As reqd) -
- Oil - 2 tsp
- Coconut oil - 1 tsp
- For grinding: -
- Shallots(Kunjulli) - 2 nos
- Cumin seeds(Jeerakam) - 1/4 tsp
- Grated Coconut - 1/4 cup
- Green chillies - 1 no

Instructions
- Grind together the ingredients for grinding into a coarse paste.
- Heat oil in a pan or a kadai.
- Saute onions, garlic, ginger and green chillies.
- Add coriander powder, red chilly powder and turmeric powder.
- Add potatoes, tomatoes and salt.
- Cook till potatoes are done.
- Add coconut paste and cook for 2 mins.
- Cut eggs into half add to the mix.
- Mix well.
- Finally, add coconut oil.

A good & different dish with egg..I tried your amla pickle too.keep posting more recipes….
A variation of this is to add Coconut milk at the end. It will be much tastier.
