Egg Avial Egg cooked with potatoes, onion, tomato and coconut 4 nos Eggs (boiled)3 nos Potatoes (cut into 1" long thin slices)2 nos Onions (cut into thin slices)2 nos Tomato (cut into thin slices)1 sprig Curry leaves3 nos Green chillies (spilt into two)1/2 tsp Red chilly powder1/4 tsp Coriander powder1/4 tsp Turmeric powder1/2 tsp Ginger (chopped)1/2 tsp Garlic (chopped)Salt (As reqd)2 tsp Oil1 tsp Coconut oilFor grinding:2 nos Shallots (Kunjulli)1/4 tsp Cumin seeds (Jeerakam)1/4 cup Grated coconut1 no Green chillies Grind together the ingredients for grinding into a coarse paste.Heat oil in a pan or a kadai.Saute onions, garlic, ginger and green chillies.Add coriander powder, red chilly powder and turmeric powder.Add potatoes, tomatoes and salt.Cook till potatoes are done.Add coconut paste and cook for 2 mins.Cut eggs into half add to the mix.Mix well.Finally, add coconut oil. A good & different dish with egg..I tried your amla pickle too.keep posting more recipes….
A variation of this is to add Coconut milk at the end. It will be much tastier.
