  • Clean ginger and slice it into small pieces.
  • Add water to the sliced ginger and bring it to boil.
  • Once it starts boiling, add sugar and bring the flame to sim for 20 mins.
  • Remove from the flame and allow it to cool.
  • Add citric acid to the cooled mixture.
  • Refrigerate.

    I make a similar ginger ale drink by adding lime juice, few dried whole red chillies, 2 cinnamon sticks,few cloves to the boiled ginger juice and sugar. Strain it and bottle it and refrigerate it.Can also make it in concentrated form by reducing the liquid. Add water of soda with a fresh slice on lime to serve when needed.Enjoy!!!

    Can you please mention how long to refrigerate the mixture and also if `citric acid` can be substituted by `lemon juice` ?

    I have also added 2 dried red chillies to the mixture, which then get strained out before bottling. It gives it a kick!
