500 g Green beans1/2 inch Ginger (finely chopped)10 cloves Garlic (finely chopped)1 tsp Fenugreek seeds (Uluva)1 tbsp Chilly powder5 nos Green chillies (chopped)1/2 tsp Turmeric powder1/2 cup Vinegar1/4 tsp Mustard seeds1 tbsp Asafoetida powder (kayam)Gingely oil (As reqd, nallenna)Salt (As reqd) For preparing green beans pickles, wash the beans well and slice into small pieces.Mix some salt, turmeric powder and steam it. 3)Dry saute mustard seeds, fenugreek and cumin seeds in a pan. Grind it to a fine powder and keep it aside.Heat 2 tbsp of oil in a pan, add some mustard seeds & fenugreek.Then add in the ginger, garlic & green chillies. Saute it well.Add cooked green beans, chilly powder, turmeric powder, salt and add the previously powdered mustard mix.When the mixture cools down add vinegar.Note: 1)Store it in bottle and serve after 1 day.
