Kerala Mixture is a famous snack in South India. This Kerala Mixture we generally do at festival times. Mainly in Diwali times. This Kerala Mixture is prepared with gram flour which we do plain sev (omapodi) and kara boondhi and we add fried curry leaves, Roasted groundnuts, fried grams, some garlic pods fried in oil and toss with spices salt. In south India we have more variety of mixture in that this Kerala Mixture is also one of that. We should see the consistency in that gram flour batter. It should not be a thin batter. It should be in pour consistency like Idly batter. In this batter we can do kara boondhi. For plain sev (omapodi) we need gram flour dough with little spices. For more richness of this Mixture we can cashew nuts. This Mixture is very crispy and tasty. This is the best tea time snack for South Indians. Now we can this step by step procedure.

  • In a vessel mix gram flour ,turmeric powder and chili powder.
  • Add water and knead into a smooth dough by adding water little by little.
  • Keep it aside.
  • Heat oil in a kadai.
  • Fill this dough in idiyappam mould.
  • then press the dough to hot oil in circular motion.
  • Fry for 2 minutes until it gets golden colour.
  • Taken this from oil and keep aside.
  • In another vessel mix gram flour,salt and water to make a batter.
  • Add this batter through holes of strainer.Fry this and keep aside.
  • In a vessel first break sev into small pieces,add fried boondi to this.keep aside.
  • Then fry ground nut.
  • Fry split channa dal also
  • Then add this fried split channa dal and ground nut to boondi mix.
  • Heat oil in another kadai add garlic pods ,curry leaves and redchilies saute for a minute.
  • Add this to boondi mix.
  • Add little chilli powder,salt and asafoetida to this mix and combine well.
