  • ❤️For cooking rice:- Soak rice for 30 minutes and drained keep aside.Heat ghee in a pan add all spices and onion ,and sauté for few minutes .
  • Add rice and sauté till the rice combines well with all spices... boiled the required water (6cups)add flavored rice ,lemon juice and salt and cook for 8 -10 minutes.
  • ❤️For Prawns masala:- Clean the prawns and make a wet marinate with above mentioned marinate ingredients apply it on prawns and keep it in the refrigerator for half an hour.
  • Make a paste of garlic,ginger and green chilies and se aside.
  • Heat oil in a pan and shallow fry the prawns, drain the excess oil in the paper towel and keep it aside.
  • In the same pan add chopped onion to leftover oil and sauté until it is translucent, add the ginger garlic green chili paste , sauté until brown color, now add tomato, chopped coriander, mint leaves and combine well.
  • Add turmeric powder, chilli powder, coriander powder ,biriyani masala , salt to taste, and combine well until the raw smell is gone. Add curd and mix well.
  • Add fried prawns and mix well, if the gravy dry then add 3 tbsp of water..( if needed)
  • Cover and cook on low flame for about 5 minutes and wait till oil starts to separate and adjust salt.
  • ❤️Final cooking and layering:- Preheat oven to 180*c In a oven proof dish, grease your cooking dish and spread half of the prawns masala and with some cooked rice.
  • Sprinkle biriyani masala, fried onion, fried cashew, raisins and chopped coriander leaves and mint leaves, sprinkle leftover ghee and few drops of saffron milk or food color milk over the rice , repeat this process.
  • Close with tight fitting heat resistant lid or close it with aluminum foil , and bake it for 20 minutes .
  • When it is done, remove and keep the dish covered until serving.
  • Serve with Raita, Green chutney, Pickle and Pappadam.....
