Kerala Style Tomato Pickle

Ingredients

Tomato
1
tsp
Garlic
paste
1
tsp
Ginger
paste
1/4
tsp
Turmeric powder
2
tsp
Chilly powder
1/2
tsp
Fennel seeds
powder
Perinjeerakam
3
nos
Green chillies
Curry leaves
A few
3
tbsp
Coconut oil
Mustard seeds
A little
2
tbsp
Vinegar
Instructions
Clean and cut tomatoes into fine pieces.
Mix with
salt
and keep it for half an hour.
Grind together chillies and
curry leaves
.
Heat
coconut oil
in a pan or a kadai.
Splutter
mustard seeds
.
Add
ginger
paste,
garlic
paste,
fennel seeds
powder and
green chillies
-
curry leaves
paste.
Stir for 2 mins.
Add chilly powder and
turmeric powder
. Stir well.
Add
tomato
.
Allow it to cook.
Add
salt
, if reqd.
Add vinegar.
Cook, until this becomes thick and gets a consistency of that of jam.
:- Serve with dosas or can be used as a side dish for rice.
