Kerala Style Tomato Rice Tomato Rice - Kerala Style Tomato Rice 1 cup Basmati rice3 nos Tomato (cut into small pieces, large)2 tsp Turmeric powder1 tsp Chilly powder1/4 tsp Asafoetida (Kaayam)Salt (As reqd)Oil (As reqd)1 no Dry red chilly (Kollamulaku) In a bowl mix together the cut tomatoes, turmeric powder, chilly powder, asafoetida and salt. In a wok, add oil and brown the red chillie. Set aside.In the same oil, add the tomato mix and cook on low heat till the tomatoes are well mashed. Add the cooked rice to this mixture and stir slowly to make sure that it does not get too soft but that all are well mixed. Garnish with the red Chillie.To cook the rice:- 6)In a pot, add the rice and add two cups of boiling water, add juice of one lime and cook till rice is well cooked.:- If there is any excess water, drain this off very well.
