Lady`s Finger-Tamarind Chutney Chettinadu Style Chutney 15 nos Lady`s finger (Vendakka)2 nos Onion (medium)5 nos Green chillies10 nos Garlic pods½ spoon Turmeric powder½ spoon Coriander powder½ spoon Chilly powderSalt (As reqd)2 cups Tamarind paste – A lemon sized(soaked in 1 (Puli)Coriander leaves for garnishingFor seasoning:-4 spoons Oil¼ spoon Mustard seeds¼ spoon Fenugreek seeds (Uluva)2 sprigs Curry leavesAsafoetida (A pinch, Kayam)2 nos Dry red chillies (Kollamulaku) Heat oil in a pan. Splutter mustard seeds.Add fenugreek seeds and asafoetida.Add curry leaves, dry red chillies, chopped green chillies and chopped garlic one by one and saute well.Add chopped onion and fry well.Add chopped lady¦s finger and fry it well too. In-between, add turmeric powder, coriander powder and chilly powder.When it smells good, add tamarind paste and allow it boil for 10 mins.When it becomes a thick paste, remove from the flame.Garnish it with coriander leaves.:- Serve with hot rice, Dosa or Idly. You have not said how to prepare the ladys finger, and also – should the garlic be grated or chopped?
