Masala Gherkins With Beans

Kovakka/Thendli with beans - very simple n tasty

  • Gherkins split it into 4 halves, Kovakka
  • or
  • 2 small Broccoli
  • or
  • 1 whole Cauliflower remove the florets
  • 1 - Bean seeds
  • 2 tsp Garlic paste
  • 4 tbsp Oil
  • 1 tsp Mustard seeds and Cumin seeds together Jeerakam
  • 1/2 tsp Salt

For masala:-


  • Mix together all the masala powders except garlic paste in a plate.
  • Heat oil in a flat bottom pan.
  • :- It should have a lid to close of its size.
  • Add mustard and cumin seeds and allow it to splutter.
  • Add garlic paste and saute for a minute.
  • Add powders to it and saute for a minute.
  • :- It should get mixed with the garlic and oil.
  • Add veggies to it and salt and saute till the vegetables get covered with the masalas.
  • Close with the lid and keep this for say 20 - 25 mins until its done.
  • :- Remember to saute in 5 mins interval.
  • :- If u think the quantity of veggies are more, then add the powders a bit more (turmeric n garam masala only). :- Also add oil if required in between. :- Also remember to keep the gas simmer to its maximum( say on 2 level)

    i followed this recipe for my first ever kovakka thoran yesterday and it came out pretty good 🙂
    i didnt have amchoor with me, but that didnt seem to ruin anything. also,as a “beginner” to the cooking scene, i was confused with whatever you meant by splitting the gerkhins into 4 – i just cut them in small circles like you would with beans…
