Mattar Masala Tasty n amazing masala with green peas 2 nos Onions1 - Tomato1 medium Ginger6 - Garlic pods (1/2 of a whole one)2 strands Curry leaves2 nos Green chillies1 no PotatoFresh frozen green peas (A handful)Coriander leaves for garnishingSalt (As reqd)1 small Chilly powder2 pinches Turmeric powder2 spoons Coriander powder1 small Mustard seeds3 tbsp Oil Cut onions, chillies, tomato, ginger & garlic (smashed), curry leaves and keep aside. Boil the potato and keep it aside too.Heat oil in a pan or a kadai.Add all the cut vegetables like onions, tomato, curry leaves, chillies, garlic and ginger and finally the boiled potato.Add chilly powder, coriander powder and turmeric powder and stir, till the raw smell of the masala goes for about 4 - 5 mins.Remove the kadai from the stove and keep it aside to cool.Once it is cooled, add these fried stuff into the mixer and grind them into a paste.Heat oil in another pan.Splutter mustard seeds.Add the paste into the kadai and add little water and stir well.Add the fresh green peas and salt and boil it for 5 mins.Garnish with some coriander leaves for taste.:- Serve hot with chapatis.:- You can use this masala as a basic masala for any other vegetables like brinjal, cauliflower, paneer-mattar, potatoes, etc. North Indian
