Nadan Mutton Roast is a delicious roasted semi dry dish that pairs well with Appam, Parotta, Roti as well as rice. Mutton pieces are combined with a spicy chilly mixture and cooked in a pressure cooker until done. The cooked mutton pieces are slow roasted in sufficient oil to a dark brown color. The lip smacking dish can be easily prepared at home. These roasted mutton chunks are sautéed with onions and green chilies.   • In a pressure cooker, add mutton, turmeric powder, 2 tsp chilli powder, 1/2 tsp pepper powder, 1 tbsp ginger garlic paste and salt, mix well, and cook for 4-5 whistles. Turn off the heat and let the pressure release on its own.
  • In a kadai heat oil, add curry leaves, green chilies and remaining ginger garlic paste. Sauté until raw smell goes.
  • Add shallots and onion, sauté till the onion gets softened and golden brown.( add some salt)
  • Add 2 tsp chilli powder, coriander powder, garam masala and remaining pepper powder. Saute well for 2 minutes.
  • Add tomato and mix well. Cover the kadai with a lid, and leave until the tomato gets thoroughly cooked.
  • Add cooked mutton in it, and sauté well for few minutes.
  • Cook till the mutton is roasted nicely and is dark in color. You can also add oil, salt , pepper or masala in between if needed.
  • Super delicious mutton roast is ready to be served with chapathi , Porotta etc....
