  • 1/2 cup Pimento stuffed olives chopped
  • 1/2 cup Black olives
  • 1 tsp Oregano leaves
  • 2 nos Tomato cut into cubes
  • 1 no Garlic minced
  • 1 tbsp Carrot grated
  • 1 stalk Celery chopped
  • Pepper powder A pinch
  • 1 1/2 tbsp Olive oil
  • 1 tbsp Red wine vinegar


  • For preparing olive salad, mix together all the ingredients: chopped olives, garlic, carrot, celery, oregano, pepper powder, olive oil and red wine vinegar. Refrigerate for 1 hour.
  • Serve olive salad chilled. You can also top a buttered slice with olive mixture and serve as sandwich.
