Omana pola is a small envelope filled with nutty-eggy sweetness from Malabar cuisine. This sweet nosh from Malabar is a deliciously layered dish of coconut filling inside pancakes that are folded and shallow fried again. It is usually prepared in Ramadan season.

  • In a bowl,take plain flour,egg,salt aand enough water and make a thin batter.
  • Heat ghee in a pan and toss in raisins and chopped almonds.
  • Add the beaten eggs with sugar and cardamom powder and make a scramble for 3 minutes.
  • Heat another pan and pour 1 spoon full of batter to make a thin pancake.
  • Place a small portion of filling in the centre.flod its corners so that it resembles an envelope.
  • Heat a frying pan on medium flame,dip the envelope in egg mixture and shallow fry in ghee on both sides.
  • The sweet omana pola is ready.
