Vegetable Au Gratin (Step By Step Photos)

  • 100 gms carrots cubed
  • 100 gms French beans cut in small pcs
  • 100 gms cauliflower cut in small pcs
  • 1 bunch spinach chopped
  • 1 cup grated Cheese
  • 4 tbsp Butter
  • 3 tbsp Flour
  • 3 to Milk
  • ½ tsp nutmeg
  • Salt to taste


  • Boil vegetables with some salt and just enough water. Steam the chopped spinach and drain off the water from the vegetables. See that the vegetables do not overcook.
  • To prepare white sauce:
  • Melt the butter on a low heat, add flour and stir with a whisk till you get a nutty aroma.
  • Add milk gradually, stirring all the while with a whisk so that no lumps are formed. Simmer on low heat stirring all the while till the mixture thickens.
  • Add + tsp grated nutmeg and salt to taste.
  • Drain of all the water from the vegetables and add them to the white sauce.
  • Cook for 2-3 minutes on a low flame.
  • Pour this mixture into a casserole dish and sprinkle grated cheese on top.
  • Preheat oven to 250 degree Celsius and bake for 20 to 30 minutes or till top is browned.


(mixed vegetables can be used according t o your taste-mushroom, peas, corn or only spinach and corn etc.)
