Beans Mezhukkupuratti Cooked and fried beans 250 gm Long beans1/4 tsp Turmeric powderSalt (As reqd)2 nos Green chillies2 tbsp Coconut oilMustard seeds (A pinch)1 stalk Curry leaves Cut beans into small pieces.Cook them along with turmeric powder and salt, until half done. Heat the coconut oil in a kadai or a pan.Add mustard seeds and curry leaves.When it starts to splutter, add the half cooked long beans and chillies and simmer, until it turn dry.:- Serve with rice and curd or any gravy. :- You can also use green banana, yam, potatoes and carrots and make mezhukkupuratti in the same way. :- Similarly, bitter gourd, ladies finger and brinjal can be used.
