Carrot Cake - American Style

Yummy and healthy cake with carrots

Ingredients
  

  • 3 nos Eggs
  • 1 cup White sugar
  • 3/4 cup Cooking oil
  • 1 1/3 cups Plain flour
  • 1/2 tsp Salt
  • 1 1/3 tsp Bicarbonate of soda
  • 1 1/3 tsp Baking powder
  • 1 1/3 tsp Cinnamon powder Karugapatta
  • 2 cups Raw carrot grated
  • 2 cups Nuts
  • 1 tsp Vanilla

Instructions
 

  • Grease a square 20 cm tin.
  • Heat oven to 150 C.
  • Beat eggs and sugar until frothy.
  • Add oil, stir in sifted dry ingredients.
  • Finally, fold in carrot, nuts and vanilla.
  • Bake for 1 hour.
  • When cooled, add icing sugar.
  • For Icing:- 1)Combine 4 oz cream cheese, 3 tbsp of butter, 250 gm of icing sugar and 1 tsp of vanilla.
