Chettinad Chicken Chettinad style chicken curry 1 kg ChickenGinger (garlic paste - 1 tbsp)½ kg Onion½ kg Tomato1 tsp Chilly powder1 tsp Coriander powder1 tsp Turmeric powder2 tsp Cumin seeds (Jeerakam)1 tsp Peppercorns (Kurumulaku)1 tsp Aniseeds (Perinjeerakam)2 nos Cardamom (Elakka)Cinnamon (A small stick, Karugapatta)1 Nutmeg (grated, Jathikka)Curry leaves (A few)Oil Salt (As reqd) Roast curry leaves and grind.Roast cumin seeds, pepper, aniseeds, cinnamon, cardamom and nutmeg and powder them.Heat oil in a pan.SautT onions, ginger-garlic paste, chilly powder and coriander powder and fry well.Add tomato and stir fry for few minutes.Add chicken, salt and turmeric powder.Allow it to cook on a low flame.When chicken is almost done, add the ground spices powder and curry leaves.:- Serve.
