Cook noodles in a large pan of boiling water, until just tender and leave it to drain.
2)Heat oil in a wok or pan.
Add garlic, onions and red capsicum.
Stir over medium heat for 3 minutes.
Add cucumber and curry powder and stir over medium heat for another 3 minutes.
6)Add veg stock, Soya sauce, salt and sugar and stir until mixture boils.
Add noodles and spring onions and stir over low heat 3 minutes or until ingredients are well combined and heated through.
