Curry Flavored Noodles

  • 250 gm Thick fresh noodles
  • ¼ cup Oil
  • 2 nos Garlic cloves sliced
  • 1 no Onion finely sliced
  • 1 no Red capsicum cut into thin 4 cm long strips
  • 1 no Cucumber small and unpeeled and cut into thin 4 cm strips
  • 2 tsp Curry powder
  • ½ cup Vegetable stock
  • 1 tbsp Soya sauce
  • ½ tsp Sugar
  • 3 nos Spring onions chopped
  • Salt As reqd


  • Cook noodles in a large pan of boiling water, until just tender and leave it to drain. 2)Heat oil in a wok or pan.
  • Add garlic, onions and red capsicum.
  • Stir over medium heat for 3 minutes.
  • Add cucumber and curry powder and stir over medium heat for another 3 minutes. 6)Add veg stock, Soya sauce, salt and sugar and stir until mixture boils.
  • Add noodles and spring onions and stir over low heat 3 minutes or until ingredients are well combined and heated through.
