2 nos Mangoes (small)Neem flowers (A handful)4 tsp Jaggery (scrapped, Sharkara)2 tsp Tamarind juice1/2 tsp Red chilly powder1/4 tsp Mustard seedsAsafoetida powder (A pinch, Kayam)5-6 leaves Curry leavesSalt (As reqd)2 tsp Oil For preparing delicate and instant achar out of neem flowers, wash and cut mangoes into small pieces.Take a small pan and fry the neem flowers in 1/2 tsp oil. Keep it aside.Take another pan heat the remaining oil and splutter mustard seeds.Add the neem flowers and asafoetida to this and stir.Add mangoes at this point. Stir for a few minutes.Add little water and cover it. Allow it to cook till the mangoes become soft.Once cooked, add jaggery, chilly powder, tamarind juice and salt.Lastly, add curry leaves and mix everything well.Delicate and instant achar out of neem flowers is ready.
