4 nos Boiled eggs2 nos Onion (sliced)Garlic (ginger paste - 1 tsp)2 nos Tomato (sliced into small pieces)Coconut oil 2 nos Curry leaves1 no Brinjal (cut into long and thin pieces)1 pinch Turmeric powder1/2 tsp Red chilly powder Fry sliced onion in coconut oil in a pan till it turns slightly golden brown. Add garlic-ginger paste and saute. Add curry leaves and sliced tomatoes and fry for 2 - 4 mins till it is done. Add salt, turmeric powder, red chilly powder and mix well.Grind this in the mixie for 2 mins. Put this in a bowl.Add salt to brinjal pieces and mix well and fry it in coconut oil.Cut boiled egg each into 4 pieces and put in the bowl.Decorate with fried brinjal pieces.Your EGG BRITOMS is ready!!!!!!!!!!! This is a new combination I never thought egg and brinjal and tomatoes together is a good starter. It is really so!!!!!!!!!!!!!!
