2 nos. Boiled Eggs2 nos. Onion(Sliced lengthwise)3 nos. Potatoes(Boiled & Mashed)12 nos. Green chillies (Chopped)12 cloves Garlic(Crushed)A big piece Ginger(Crushed)Few Curry leaves1/4 Cup Mint leaves(Pudina)1 Cup Coriander leavesRusk powder (As reqd)Sunflower Oil (As reqd)2 tsp Garam Masala2 nos. Eggs (Beaten with little salt and pepper)

For preparing Egg Kebab, first boil the eggs.Boil the potatoes and mash them.Heat oil in a pan and add onion along with chopped green chillies and saute well. Then, add curry leaves, ginger, garlic, turmeric powder and garam masala. Saute well.Add mashed potatoes, mint and coriander leaves and mix well. Check for salt and add if required. Remove from flame.Meanwhile, cut each egg into four pieces lengthwise.Pluck a round from the prepared potato mixture and flatten it slightly in your palm.Pack each egg slice in the above potato mixture and shape in the form of 'Unnakaya'. Dip the Egg Kebab in the beaten egg mixture mixed with little salt and pepper.Roll the Egg Kebabs in rusk powder. Heat enough oil in a pan and fry Egg Kebab to a golden brown color.
