This lightly spiced fragrant dish packed with shrimp, squid, noodles and tender vegetables makes a great choice as a main dish

Ingredients
- Bean vermicelli noodles(soaked in water, cellophane noodles) - 1 packet
- Dark soy sauce - 1 tbsp
- garlic(minced) - 1 tsp
- Oyster sauce - 3 tbsp
- Shrimps(peeled and de-veined) - 300 g
- Squid meat - 250 g
- Dried Chinese mushrooms(soaked in hot water and diced) - 50 g
- Carrot(medium sized and cut into fine matchsticks) - 1 no
- Red pepper(cut into strips) - 1 no
- Onion(cut into wedges) - 1 no
- White Pepper - 1/2 tsp
- Oil(As reqd) -
- Salt(As reqd) -
- Sugar(A pinch) -

Instructions
- Soak the vermicelli in plenty of warm water until soft. Drain, refresh in cold water and drain again.
- Add vermicelli, soy and oyster sauce to the wok. Stir until well combined with the sauce. Add shrimp and squid to the noodles. Check for seasoning.
- Remove from heat. Garnish with spring onions and sliced red chillies.
