Ingredients
- Potatoes(red/white)(chopped into 1/2" pieces, large) - 4 nos
- Spinach(chopped coarsely, Paalak/Cheera) -
- Cumin seeds(Jeerakam) - 1/2 tsp
- Garlic pods(thinly sliced) - 2 nos
- Onions(finely chopped, medium) - 2 nos
- Red chillies - 3 nos
- Red chilly powder(optional) - 1/4 tsp
- Oil for frying - 5 tbsp
- Green chillies(Thai) - 5 nos
- Turmeric powder - 1/2 tsp
- Salt(As reqd) -
- Fresh coconut(grated) - 1/2 of
- or -
- Dry grated coconut - 5 -

Instructions
- Heat oil in a medium non-stick pan.
- Add cumin seeds and garlic and fry lightly, until the garlic starts changing color.
- Add onions and red chillies and fry, till translucent.
- Add turmeric powder, chilly powder and salt to taste.
- Add potatoes and green chillies.
- Cover and cook on medium low heat.
- :- Do not add water.
- Keep stirring the potato mixture in between, until thoroughly cooked.
- Add the spinach and mix lightly, until wilted.
- Add the coconut and mix well, until the mixture is dry.
- :- Serve with rice.
